At Peet's, when you order coffee from us today, we'll roast it for you tomorrow. Not until then will your coffee be packaged and on its way to you. This is Peet's Roast-to-OrderTM commitment and the main reason our coffee tastes so rich and flavorful. Only coffee that has been recently roasted can taste so good.
Roasted coffee is a perishable food - like fresh produce, or artisan bread. The flavor peaks a few days after roasting and diminishes over time, even in a sealed bag, and very quickly once exposed to air, light, and moisture. So the sooner you can enjoy your beans after roasting, the better your coffee will taste. (Another tip for optimal flavor is to always buy whole beans and grind only the amount you need just before brewing).
Six days a week, Peet's expert roasters arrive at our roastery around 4am and carefully deep-roast all 32 of our coffees by hand in small batches. Joined by our coffee buyer, they taste every coffee that is roasted, every day, as a way to maintain the highest level of consistency. And by the day's end, our coffee roasted in the morning is on its way to you. We do not roast coffee in advance and store it in our warehouse. We only roast coffee to your order - so you can enjoy it extremely fresh.
